Emulsifiers are a substance that coats the particles
of the dispersed phase and prevents coagulation of
colloidal particles, colloidal suspension of a liquid in
another liquid. It allows smooth mixing of ingredients
and prevents separation. Keeps emulsified products stable,
reduces stickiness, control crystallization, keeps ingredients
dispersed, and helps products dissolve more easily. Emulsifiers
allow water and oils to remain mixed together in an emulsion.
